In the ‘Eat Well” section you will find a selection of recipes which have been developed for vegetarians and vegans who are stroke survivors.

But first a word from two key stakeholders....
Before diving into some wonderful recipes, let's hear from Associate Professor Lesley MacDonald Wicks, Advanced Accredited Practising Dietician and Nutrition Researcher, Newcastle University and Karly Zacharia, PhD Graduate in Nutrition and Dietetics, Newcastle.
These two Stroke researchers and academics played key roles in the design and development of I-REBOUND, in particular the section on “Eat Well”
A simple, nutritious breakfast that you can customise and make your own source of fibre.
Hint: You may wish to pre-prepare a dry mix of oats, seeds, and bran/puff rice in proportion for convenience and just use a cup measure each time. Saves time!

The Creation of I-REBOUND
The I-Rebound website has been developed by the Stroke Foundation and the University of Newcastle and co-designed with Stroke Survivors. It has been designed to reduce the risk of subsequent strokes by providing resources for eating well and moving more.
Professor Coralie English. University of Newcastle, who provided sage and strategic leadership to the I-REBOUND Project explains the objectives of this truly unique resource.. The website was funded by the Stroke Foundation (using funds from the Nancy & Vic Allen Stroke Prevention Memorial Fund Grant\}.
